Apple Raita

Ingredients

  • 125 gr yogurt plain whole milk
  • 1 small tart apple
  • 5 gr ginger
  • 1 chile serrano
  • 2 gr salt (or to taste)
  • 5 gr sesame oil or vegetable oil
  • 3 gr mustard seeds black
  • 3 gr cumin seeds
  • 1 clove garlic minced

Instructions

  1. Peel and coarsely grate the apple as well as the ginger. Remove the seeds from the serrano chile and finely chop it.

  2. In a small mixing bowl, stir together the yogurt, the apple, ginger, chile and salt.

  3. Warm oil in a very small skillet over medium heat. When oil is hot, add mustard seeds and cumin seeds. Let seeds sizzle and pop, then stir in garlic and let sizzle without browning.
  4. Carefully pour hot contents of skillet into the yogurt and stir together. Let the mixture sit for 5 minutes, then taste and adjust seasoning. Serve at cool room temperature.

    (May be prepared up to several hours in advance.)

But with great pleasure I’m touring also in other countries kitchens, to see what’s on with the “succulent” taste.
Since years I am a great fan of Paul Bocuse, Joël Robuchon, Alfons Schubeck and many others.
